Creamy Carrot Soup

This soup is a crowd pleaser. With savory and sweet notes combined with a super velvety texture. We love this soup any time of year but it is like heaven in a bowl on a cool day.

Ingredients

 

  • 8 - 10 large carrots peeled, sliced into 1/2" rounds
  • 3 -4 golden potatoes washed, cut into fourths ( any potatoes will do)
  • 1 small onion 1/4" dice
  • 1 small yellow beet peeled, sliced (optional)
  • 2 tsp. No.8 Mirepoix
  • 1 tsp. No.2 Battuto
  • 1/2c. heavy whipping cream
  • 1-2 tsp. salt
  • 8 c. water
  • 2 knobs butter
  • 2 Tbsp. olive oil

 

Directions

  • In a large sauce pan add oil over med-hi heat until shimmering
  • Add onions and sweat 2-4min. on med-low heat
  • Add water
  • Add all vegetables
  • Add salt
  • Bring to a boil and simmer until all vegetables are cooked and soft
  • Use a blender, Vitamix is best, to blend smooth take care not to over fill blender with hot soup. Do in two or three batches if needed
  • Return to pot, add butter and cream and warm gently

 

Serve with a dollop sour cream and a side of breakfast potatoes.

Homemade tacos are so easy and can add some fun any day of the week.

This recipe uses our No.3 Sofrito and No.4 Refogado blend but have fun and experiment with Oomph and your favorite ingredients.

Cook Time: 20 min.

Total Time: 50 min.

Ingredients

 

  • 2 tsp. No.4 Refogado Oomph Cooking Blend
  • 2 tsp. No.3 Sofrito
  • 1lb Ground Beef / tofu
  • 1/2 c. Tomato sauce
  • 1/3 c. water
  • 1 Tbsp. olive oil
  • 8 tortillas
  • Grated cheese
  • 1 tomato diced
  • Shredded cabbage or lettuce
  • Optional ingredients:
  • Sprouts
  • Pumpkin Seeds
  • Cilantro
  • Lime wedges
  • Beans

 

Directions

  • Add olive oil to a large saute pan
  • Over med heat brown meat
  • Add tomato sauce, Oomph blends and water.
  • Simmer gently for 3- 5 min
  • Add salt and pepper to taste

Oomphing a Grilled Cheese

A classic sandwich with some fun ideas for twists!

The options are endless for creating scrumptious and fun grilled cheese sandwiches.

This recipe uses our No.4 Refogado blend but you can use any blend that tickles your fancy.

Prep Time: 10 min.

Cook Time: 6 min.

Total Time: 16 min.

Servings: 1 sandwich

 

Ingredients

 

  • 2 tsp. No.4 Refogado Oomph Cooking Blend Bloomed (see recipe in FAQ or on Breakfast recipe page)
  • 2 slices of bread (you can use biscuts, or rolls too!)
  • Several slices of cheese or brie
  • Butter for bread and blooming
  • Sliced tomato
  • Options:
  • Sliced red onion
  • Thinly sliced apples
  • Thinly sliced ham or salami

 

Directions

  • Bloom your Oomph and set aside
  • Heat your pan, we prefer cast iron
  • Butter one side of each slice of bread
  • Spread Oomph onto bread
  • Lay cheese and tomatoes on bread and any other elements you are adding.
  • Slowly grill sandwich in your pan until both sides are toasty and cheese is melted.

 

Serve with tomato soup!

Warm Leek Pasta Salad

This is perfect as a side dish or as a main lunch dish.

Leeks are creamy and delicious and in this pasta salad they shine.  

This recipe uses our No.5 Three Star blend but have fun and experiment with Oomph and your favorite ingredients.

Prep Time: 10 min.

Total Time: 30 min.

Servings: 2 - 4

 

Ingredients

 

  • 4 - 5 c. cooked penne or other pasta
  • 1.5 Tbsp. No.5 Three Star blend
  • 1 leek halved, cleaned and sliced thin
  • 6 med. mushrooms sliced thin
  • 2 Tbsp. water
  • 1/2 c. soft cheese
  • 1 small carrot
  • 1.5 Tbsp. butter
  • Salt and pepper to taste

Directions

  • Add butter to a medium sized saute pan
  • Add leeks and mushrooms, cook on med-low until leeks have softened ( you can cover and add a splash of water if needed, do not let them brown)
  • Season leeks and mushrooms with salt
  • Add No.5 Three Star blend and water to pan as needed to rehydrate
  • Add diced carrots and saute until carrots are just tender
  • Add cheese to vegetables and mix well
  • Add pasta and mix well.

 

Serve warm with a main course or on buttered toast as a main lunch dish.

Mango Salsa with Oomph

Ingredients

 

  • 2 medium tomatoes diced
  • 1 med. mango diced
  • 2 tsp. No.3 Sofrito bloomed with water only
  • 8-10 sprigs cilantro chopped
  • 1/2 med. onion finely diced
  • 1/2 tsp. salt
  • 1 - 2 tsp. apple cider vinegar
  • Juice from 1 sm. lime
  • 1/2 - 1 jalapeno finely diced
  • 1 clove garlic micro planed

 

Directions

  • Mix all ingredients together and let sit for a few minutes to 1 hour before serving chilled.

 

Serve with a dollop sour cream and a side of breakfast potatoes.
